Thanksgiving Leftovers Turkey Pot Pie

I had a lot of leftovers…. I had been concerned, with the quantity of people I was having for Thanksgiving day, that I would run out of food, so I, as always, went over board… Enough for people to take home with them, enough for leftovers to feed a small third world country….
A lot of leftovers have already gone into the freezer. Turkey stock was made, pizzas and home-made hot pockets were created… turkey coming out of our ears. I had just enough meat and other things to make one of our all time favorite left over standards. You don’t have to wait until Thanksgiving to do this recipe. Left overs are a beautiful thing!

Stuffing makes a fine “crust”… pressed that into a greased pie plate.

I had 1 and a half cups of left over broccoli… cut that up into smaller chunks, added turkey and gravy……

Poured over the crust….

Added some cheese, because, face it… everything is better with cheese!

Plopped some potatoes on top…

Baked.. Fresh out of the oven!

Pretty quick, filling dinner! Again, it may not look so pretty plated, but it sure tasted good!
Thanksgiving Leftovers Turkey Pot Pie:
- Stuffing (already cooked)
- 1 – 2 cups of left over vegetables
- 2 cups of gravy, if it’s thick, you can use 1 cup of gravy, and 1 cup of liquid to thin it down a bit.
- 1 and 1/2 cups to 2 cups of cut up turkey. (I have also made this with left over chicken, beef, etc.)
- 1/4 to 1/2 cup of cheese
- Mashed Potatoes
Preheat oven to 375 F
In a greased pie plate, press the stuffing in the bottom to make a crust.
In a bowl, combine vegetables, meat and gravy, pour over stuffing.
Sprinkle on cheese
Top with mashed potatoes.
Bake for 35 – 45 minutes , until filling is hot and bubbly, and potatoes have a nice golden brown to them.
Great idea! I will try this with chicken!
Also really good with hamburger, beef, left over ham and pork too!
