Peanut Butter Chocolate Bites Recipe

Today I am a bit sad…. I love blogging about food and all that, but music is my true passion. With the new laws and rules, it’s too easy to get into trouble unless you have express permission to use anything. Some band’s don’t even approve of their videos being linked to. So with that said… I have decided that until my permission slips come in, I am going to concentrate on the food aspect of this blog. I hope you all don’t mind. 😉
Today’s recipe was inspired by sadness…. it is one of my all time favorite, richest and oh so not good for you recipes from when I was a kid. The total COMFORT FOOD…. (I say that as I am shoving yet another Peanut Butter Chocolate Bite into my mouth, by the way….) Another form of comfort to me is music… and as I sit here writing this post, I am listening to my “The Unforgiven” CD by Within Tempation. I think I have now listened to “A Demon’s Fate” 10 times today… what can I say, I guess you have to know me to get it…. BTW… Within Temptation has a new album being released Jan 31, 2014… “Hydra”…. From what I have heard from the EP tracks… I can’t wait to get my hands on it.. OMG THAT’S TOMORROW!!!!!!!!! *Plans a trip to Independent Records….*
Ok.. anyway… I digress… on to the recipe. 😉

Peanut Butter Chocolate Crunch Bites – Individually wrapped before bagged and ready for the freezer.
I am going to say this again… this is very rich, and not low calorie. You can cut this into bars, but do what your waist line can handle. I prefer to keep my waist line at a minimum and just like when I was a kid, cut them into bites. (I think at this point I have eaten two bars worth, which is about 8 pieces… but sometimes ya just gotta live a little.) These are also no bake.
Because I was making these to also give out to friends, I made two pans…. that’s a total of 80 bites. I also put 20 bites into my freezer for another day.
Peanut Butter Chocolate Bites
Yields 40 bites or 20 bars.
Ingredients:
12 oz Chocolate chips
4 tablespoons butter or margarine
1 teaspoon of vanilla
6 cups of corn flakes OR 6 cups of crushed corn chex/corn biscuits cereal. (Don’t over crush into crumbs, just break them up a little)
1 cup of sugar
1 cup of corn syrup
2 cups of peanut butter (creamy or crunchy, your choice)
Prepare a 9 x 13 pan by greasing it. I also add a piece of waxed or parchment paper to the bottom to make these easier to come out of the pan.
In a double boiler or microwave, melt together the chocolate chips and the butter, stir well, add the vanilla. *You want to keep this warm so if you are going to microwave it, do this step AFTER you have added the next step to the cereal.*
In a sauce pan, combine sugar and corn syrup. Mix until sugar is melted and the mixture is bubbly over med to low heat. Remove from heat and stir in peanut butter.
In a large mixing bowl, add your cereal, then pour the peanut butter mixture over top, mixing thoroughly. Press into your prepared pan.
Pour your chocolate over the top, and spread to cover.
Let firm up and cut into bars or bites.
To Freeze: Wrap each piece individually with plastic wrap. Place in freezer bags. To eat them, just pull them out, let thaw and enjoy.
